We’re halfway to Bali! Well, not really halfway. We’re in Hawaii, halfway across the Pacific, but still have 30+ hours of travel until we actually reach our new home… Luckily we have a week here to relax and perfect our tans/surfing skills before heading over there! We’re visiting my dad here, and everyone is FREAKING OUT about Hurricane Ana coming by this weekend. We (and Dad) don’t think it will actually be a big deal, but might put a hamper on our tan/surf plans — rain and HUGE surf may turn this Hawaii trip into an exploration of the indoors! Nah. We’ll go check out the big wave surfers and enjoy it no matter what!

I’ve realized, in looking over the things I’ve cooked in the last few weeks, that I’m leaning heavily towards breakfast and carbs. All the things I missed in Asia! With the exception of one hotel, above a Mexican restaurant in Siem Reap which served a mean huevos rancheros, breakfast wasn’t usually noteworthy. I didn’t mind it, but it wasn’t an event that I was psyched about. I LOVE special breakfasts — pancakes, waffles, huevos, whatever — instead of cereal or whatever. I can’t even think what a “normal” breakfast is for me at home, but it usually isn’t one of those things I mentioned. So, when I get the chance to cook a nice breakfast, I take it! These last few weeks have certainly provided such an opportunity!

These waffles are “healthy.” I’ve been cooking almost exclusively with whole wheat flour lately, as you might have noticed. I know that does NOT make something healthy. It is, though, somewhat better! I added in some flaxmeal to these waffles, too, which is another little boost. I figure you should take whatever you can get! When you spend the rest of the day eating brownies like these, you might as well have a “healthier” waffle, right?

Now that I’ve gone on and one about “healthy healthy blah blah blah” you might be worried these taste like gross cardboard. THEY DON’T! I promise. I avoid that with some maple syrup and cinnamon — two things which I almost always put into pancakes and waffles.

With that, I leave you to this lovely breakfast — I’m heading out to enjoy the gorgeous Hawaiian islands, and our last few days in the USA! It’s fun to be in the one place I associate with the most unique cultural makeup in the USA, and most “Asian” — we can get rice, soy sauce, and raw fish with nearly every meal… Which we LOVE! This certainly is a fun place to visit!

Whole Wheat Flax Waffles

Recipe: by Mary
Serves: 2-4
Ingredients
  • 1 cup whole-wheat flour
  • ½ cup white whole wheat flour
  • ¼ cup ground flax seeds
  • 2 Tbsp brown sugar
  • 1½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1⅔ cups milk
  • ¼ cup melted butter
  • 1 Tbsp pure maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
Instructions
  1. Combine all of the dry ingredients, and whisk together.
  2. Combine all of the wet ingredients, in a separate bowl, and whisk together.
  3. Combine the wet and dry ingredients, mixing until smooth.
  4. Heat your waffle iron and cook the waffles according to your specific iron's directions. Top with powdered sugar, yogurt, maple syrup, and any other favorite topping.
Notes
I topped mine with yogurt and chopped apples mixed with cinnamon/sugar, along with maple syrup! Feel free to top with whatever sounds good to you!

    I love special breakfasts too! There’s nothing better than waking up to some pancakes or waffles – and if they have a health boost even better! Because yeah, brownies… Love them too 🙂
