Whipped Vanilla Honey

Sometimes life isn’t all cookies and cupcakes. Sometimes it’s ugly-lasagna-you-can’t-take-a-good-photo-of or delicious-but-hideous-misshapen-scones. Sometimes, I have kitchen fails in a BIG WAY.

This week is one of those times. We’re leaving for Alaska in less than two weeks, so I’ve been planning on working ahead a bit. Usually, I do this without even trying! It just happens, and I sometimes have 10 posts ready to go, two weeks early! This is not one of those times. I’m making deliciously ugly, non-photogenic food. Ugh. Sorry folks!

Luckily, I have a big ol’ batch of this whipped honey to keep me company! And some english muffins (with ugly pictures), to eat them on! Perhaps you’ll see those one day too.

Making this really couldn’t be easier: combine honey (high quality honey), and ground vanilla beans. Whip, whip, whip, and eat! These pictures were taken while it was still fresh out of the mixer, so it is somewhat runny; however, once it fully cools back down and settles, it becomes more spreadable. Either way, it’s delicious!

Ingredients
  • 1 cup honey
  • 1-2 tsp ground vanilla beans
Instructions
  1. If necessary, heat the honey enough to be runny.
  2. Combine the honey and ground vanilla beans in a stand mixer with the whisk attachment. Whip, on high speed, for at least 8 minutes.
  3. Enjoy!

    That actually would be a fabulous post- your kitchen fails. You set the bar so high with your stunning food, it would be fun to see a little behind the curtain. Have an amazing time in Alaska!!!

    Don’t feel bad – I just realized I left out the baking powder in the shortcakes I made for our strawberry shortcake tonight! We will have to eat them anyway.
