Veg-bowl train: coming in hot!

This is another one of those recipes that I could make into the LONGEST TITLE EVERRRR. I guess that’s why I’m sticking with “vegan bowl” as my general “this is healthy and has a $&*@ ton of veggeis in it” name. Beets! Carrots! Kale! Whatever you want! HEALTHY STUFF GUYS, HEALTHY STUFF!

Just like the week after I came home from Iceland, after not having veggies for waaaay too long, I’m back on the “omg gimme all the veg in the land” boat after getting all burgered-out last week. I guess I’m all about the extremes, amiright? Also, excuse the abundance of transportation-related metaphors (trains, boats, etc.) in this post. It’s hot as heck and my brain is sweating out nonsense.

Here’s the basic approach to this kind of bowl: find all the veg in the land, chop/shred all of it, find a few tasty things to blend together for a sauce, and mix it all together. Add something nutty or chewy or slightly-interesting (nori, pistachios, craisins, WHATEVS). Put it down the hatch. LIFE COMPLETE.

While the heart of this bowl is in the veggies — I shredded a carrot and a beet, steamed kale, added sauerkraut, and pistachios — the sauce is what drives it home. I’ve been loving my peanut bowl, but felt like mixing it up and wanted a spicy/fresh/citrusy dressing. HERE WE GO! I took a whole jalapeño (yes yes yes yes yes!) and blended it with some tahini, lemon juice, olive oil, lots o’ garlic, and a little apple cider vinegar (because health. duh.). SO TASTY OMG! Clearly you have to like jalapeños. And garlic. And lemon. But if you’re on board with those three, you’ll love this. ALSO I threw a bunch of nutritional yeast in the bowl, not really for taste, but just because it seemed like the right thing to do. Have at it. Or not. You do you, boo!

Serves: 1-2
Ingredients
  • Dressing
  • 1 jalapeño
  • 3 garlic cloves
  • 3 Tbsp olive oil
  • 2 Tbsp tahini
  • 1 tsp apple cider vinegar
  • 3 Tbsp lemon juice
  • Bowl
  • 1 carrot, shredded
  • ½ beet, shredded
  • 2 cups kale, steamed or massaged
  • ¼ cup sauerkraut
  • ¼ cup pistachios, crushed
  • 2 Tbsp nutritional yeast flakes
  • ¼ cup chopped fresh cilantro
Instructions
  1. To make the dressing, blend all of the dressing ingredients together. Add salt and pepper, if needed.
  2. Combine all of the bowl ingredients, top with the dressing, mix, and enjoy!

    That jalapeno garlic tahini sauce sounds SO GOOD. I love spicy variations on anything, so I can’t wait to try this out! 😀
