I guess husbands can be alright sometimes. Mine came up with this creation, so you can thank him for making me do it!

If you’ve been a TKP reader long enough, you may remember Oreo Cookie Butter — one of the very first recipes ever posted on The Kitchen Paper! It seemed ridiculous and totally silly, but the world has taken notice and that post is BY FAR (like 50k per month more than anything else) my most visited page. CRAZINESS!

Derek is all about making the most of a good situation, so he’s been harassing me to make more cookie butter for a while now. Top of his list is “Nutter Butter Butter” — something I refuse to make on the premise that 1) It sounds ridiculous and 2) I’m not into peanut butter (sorry/notsorry). Maybe I’ll break down one of these days, but so far I’m holding strong!

When he suggested Thin Mint Butter, however, I knew I had to give in. Everyone LOVES thin mints! I love thin mints! I immediately saw a flaw though, and pointed out that it isn’t Girl Scout cookie season. My brilliant husband then informed me that Keebler Grasshopper Fudge cookies are essentially THE SAME THING. Basically, you can have thin mints ALL YEAR ROUND.

Now, I was once a girl scout. And I’m somewhat of a purist when it comes to girl scout cookies. I’m not going to say a Grasshopper is the SAME as a thin mint cookie; however, if you’re grinding it up into cookie butter, it totally doesn’t matter. The taste = identical. Ground up into delicious, chocolatey-minty cookie buttery goodness — I’d be willing to say you couldn’t tell the difference in a blind taste test.

So for everyone that LOVES cookie butter, oreo cookie butter, ridiculous spreads, etc. AND for everyone who wants a little out-of-season Girl Scout Cookie action: this is for you. If you’re going to comment with “What do you do with it?” I think you need to exercise your imagination a little bit more. (Obviously you eat it on a spoon or put it on anything/everything you eat. Including/not limited to fruit, crackers, toast, cookies, and fingers.).

Recipe: by Mary
Ingredients
  • 1 (10 oz) package of Grasshopper Cookies (or Thin Mints)
  • 6 Tbsp butter, melted
Instructions
  1. In a strong blender or food processor, blend the cookies until they are a fine powder. Add the melted butter and blend until totally smooth.
  2. Store in the refrigerator, but microwave before eating to soften (it will harden upon cooling, but easily becomes spreadable again with heat).

    The oreo cookie butter recipe uses coconut oil instead of melted butter. Is there a reason for that or is the coconut oil interchangeable with butter depending on your preference?

      They are absolutely interchangeable! The butter will make a softer end result at room temperature, whereas the coconut oil (being firm at room temperature) will be harder. Enjoy!
