A lot of people ask me “Why nut butters?” and my answer is pretty simple: they’re delicious, they’re growing in popularity, they’re healthy (in moderation), and there wasn’t a Nut Butters book out there when I started. I made chocolate roasted almond butter very shortly after starting The Kitchen Paper, and was surprised at how well-recieved it was. People loved it! So I got to work. I made a list of every nut I could think of to make into a butter, and then every flavor combination that I love. Then, with my two columns, I drew lots of lines to connect each flavor with the perfect nut. And this, friends, is how beautiful little nut butter babies are made. Woop! {You can buy it here!}

The thing that makes this book special, though, isn’t the awesome combinations of flavors (mint chocolate chip macadamia butter! Rosemary cashew butter! Bacon Pistachio Butter! Gingerbread Cookie Dough Sunflower Seed Butter!). My favorite part of the book is that for each butter recipe, there is a matching REAL food recipe! Sure, nut butters are great on a spoon or on toast… but they have so many uses. I made a wide range of recipes, from sweet to savory, breakfasts, desserts, dinners, salad dressings, soups, cookies, muffins — they’re all over the place. With those guidelines and recipes, you can create infinite other possibilities! Don’t like a certain flavor in the nut butter? Swap it out for what you DO like, and you’ll have a totally new dish! Really, the possibilities are endless.

    So far my favorite nut butter is almond, sweetened slightly with vanilla and then salted with sea salt but will be trying more. Your cookbook sounds great!
