SPRING IS HERE! I know I keep rambling on and on about spring, but seriously: it’s here. Hallelujah! Except for the last few days in Portland. Sorry, Oregon, but you’ve gone back to cold rain. NOT COOL. But I know spring is under there somewhere! WE WILL MEET AGAIN! You know what goes will with spring? Delicious limey minty slushy drinks that are to.die.for! This drink: it is exactly that.

This drink is something I drank on the regular in Bali. Like, all the time. It’s so freaking hot there that all you want is something COLD and refreshing — and that means drinking this kind of thing all day long. I don’t mind! This is another one of those “do whatever you want” kind of things — want more mint? Add more mint! Want more sweetness? Add more sugar! Want more lime? ADD MORE LIME! You get the idea. And those are really the only ingredients (other than ice) … so, get after it!

I plan to make these babies allllll summer long. I’m pretty good at staying hydrated, but it’s so much fun to have something YUMMY to drink in order to stay hydrated, all while avoiding something too heavy. This is HEALTH FOOD, PEOPLE! But really. Just don’t remind me about the sugar. (I love you, sugar!)

Serves: 1
Ingredients
  • 2 Tbsp boiling water
  • 1 Tbsp sugar
  • 2 cups ice
  • ¼ cup lime juice (fresh)
  • ¼ cup loosley packed mint leaves
Instructions
  1. Combine the boiling water and the sugar, and stir until the sugar dissolves.
  2. Combine everything in a blender, and blend until it's a smooth slushy! Add more water or lime juice as needed to get it flowing.
