Nutty Cardamom Granola

- 2 cups oats
- ⅔ cups sliced almonds
- 1 cup pecans
- 1 tsp cardamom
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ⅔ cup shredded sweetened coconut
- ¾ cup maple syrup
- ¼ cup coconut oil, melted
- pinch of salt
- Preheat the oven to 350F.
- Combine all ingredients in a large bowl, and mix to fully combine.
- Spread the mixture in an even layer on a baking sheet, and bake for 25-30 minutes. Keep an eye on it towards the end so it browns but doesn't burn!
