MOOTHIE MONDAY HEY HEY WHAT WHAT! Yeah. We’re back. Monday morning smoothie goodness intended to PUMP YOU FULL OF POTASSIUM. In case you’re into that kind of thing. I am. Especially when it’s been hotter than hot and I spent all weekend standing in a blazing sunny gravel parking lot surrounded by hundreds of sweaty Portlanders. Also, being a sweaty Portlander myself. Sounds like fun, right?!

But really, it was fun. Project Pabst set up two days of music on the waterfront, and a friend gave me a free ticket, so … I went! We spent Saturday hiding in the PBR-cade (think: lots of free arcade games and AC) between shows, and wisely chose not to show up until the bands we were really interested in (Passion Pit, Weezer) played Sunday. Still: HOT day. Hot and fun! But now my muscles are all cramping from sweating all my salts out β€” hence the potassium intake!

Also, I realize this is two “cherry almond” recipes in a row … which is completely unplanned and a total food blogger fail. SORRY GUYS. It’s a good combo, OK? This started as “all the potassium things” β€” bananas, coconut water, dates β€” and then morphed into “all the yummy things” too. So I added cherries and almonds (to fill me up!). Definitely a good, simple, easy smoothie! And waaaay too easy to drink. You might be surprised at how quickly this disappears.

If you don’t have a strong blender, you might opt to either soak your almonds overnight, OR use almond butter instead of almonds. If you have a strong blender (like a vitamix), just turn it WAY up and let it obliterate the almonds so you don’t have a grainy smoothie!

Serves: 1
Ingredients
  • 12 oz coconut water
  • 1 frozen banana
  • ⅓ cup cherries (pitted)
  • ¼ cup raw almonds
  • 2 dates (pitted)
Instructions
  1. Combine all ingredients and blend until smooth!
Notes
I add 1 tsp of maca to mine, too!

    I actually think the back-to-back cherry/almond recipe is great for grocery planning πŸ˜‰ Makes sense to have more than one way to use them! And this looks delicious and refreshing.
